At the end of May, the Viennese start-up Revo Foods presented a vegan salmon fillet from the 3D printer, which is said to have a consistency similar to that of a naturally grown fish. Revo Foods launched plant-based smoked salmon over a year ago. It is now also available for purchase. According to the manufacturer, the fillet can be processed in the same way as its animal counterpart: freezing, boiling, frying, steaming, and so on.
The artificial smoked salmon consists of ten different ingredients, including pea protein, algae extract and various vegetable oils from flaxseed and canola. It is said to save 75 percent of CO2 during production compared to farmed salmon. Because it contains the same nutrients and vitamins but no heavy metals, it’s even healthier, according to Revo Foods.

“Unlike other technologies, we can [mit einem 3D-Drucker] perfectly control the structure,” said founder Robin Simsa in 2021 to the Vienna Standard. However, the start-up founded in 2020 did not give any further details on the recipe and the printing process of the fillet. It is still in the patenting process.
According to testers, the smoked salmon comes pretty close to its natural counterpart. However, the imitation lacks the characteristic pink and white grain and is softer and less elastic than real fish, the standard found. Overall, the mass tastes fishy, but the smoke flavor is too strong.

There is also no risk of confusion with the original with the filet that is now being presented, says Trendingtopics after a tasting: “When the piece of plant-based salmon fillet is cut up on the plate, it falls as it should. On closer inspection, differences to the original product are noticeable, as does the taste.”
The salmon fillet is scheduled to come onto the market in 2023, but initially in the catering trade, not in the supermarket. The start-up is also working on other products such as tuna spread.
